Friends of Screaming Eagle restaurant and fans of its executive chef Erwin Hüsken are invited to attend a culinary extravaganza on Saturday, October 6th, featuring a special Tuck Beckstoffer menu. As seating is limited, early reservations are encouraged.
Chef Erwin Hüsken will team up with Chef Bram Verleg, of the Flying Fishbone restaurant in Savaneta, to create a truly impressive pairing, befitting the fine wines of Tuck Beckstoffer, a wine company from St. Helena, California.
The menu that evening will take off with Mousse of veal sweetbread, accompanied by port jelly served on rye bread as Amuse, which will be paired with Zonin Grand Cuvee. Then the first appetizer will deliver Tartar of scallop and Salmon with caramelized korubuta pork belly served with mango and caviar of dutch herring, paired with 75 Sauvignon Blanc. The second appetizer will reveal Brill Fillet lacquered with veal stock on puree of celeriac served with spaghetti of string beans and chanterelle dressing, paired with Hogwash Rose. As the 1st main course pan fried Confit of Veal Shoulder will be served with hazelnut-herb crust, deep fried capers, sauce choron and a dressing of cocktail onions, bacon and parsly paired with 75 The Sum. The 2nd main course will be Beef Wellington, beef tenderloin baked in puff pastry served with haricots verts, grated fresh black autumn truffle and duck liver sauce, paired with 75 Cabernet Sauvignon. For dessert, Tarte Tatin of figs with almond ice cream will be paired with Offley Tawny Porto.
As there are only 60 seats available for the Tuck Beckstoffer patrons, reservations are a must for this special and exclusive menu and wine pairing, priced at $125+s.c +bbo, including all food and wine.
