Mother’s Day brunch at the Radisson Aruba Resort Spa & Casino was held in the Grand Caribbean Ballroom and entertained over four hundred locals and visitors.
Executive Chef Hector Espinoza presented an exciting menu featuring new salads such as Orange Mint Scented Couscous with Feta Cheese Salad, Apple and Potato Salad with Mustard Cream Dressing, Walnut Chicken Salad with Sundried Cranberries, Seafood Pasta Salad with Saffron Dressing and many delicious Gourmet Entrees such as Pan Fried Grouper with Asparagus, Eggplant Puree and Sweet and Sour Red Beet Emulsion, Macadamia Nut Crusted Chicken Breast with Roasted Coconut and Lemon Grass Herb Oil, Roast Pork with Apple Gravy, Sausage Stuffing and Caramelized Golden Mangoes, Creamy Cheese Tortellini with Asparagus & Sundried Tomatoes in Creamy Pesto Sauce, and Potato and Portobello Mushroom Gratin. The Weekend Stay for pre-sale ticket buyers were the Rijksen from Savaneta. A Larimar Spa Treatment went to Andy Lopez, Santa Cruz; Laguna Breakfast to Elvira Orman, Gielstraat; Laguna Breakfast to Rudella Benjamin, Roncado; Laguna Dinner to Melina BareÃ±o, Piedra Plat; Laguna Dinner to Jadira Faro, Papaya; Sunset Grille Dinner to Natasha Matai, San Barbola and a Weekend Stay to Patricia Peters, Apachenstraat.
