Celebrity Chef Nelson Mendez, from Venezuela, in collaboration with the Westin Aruba Resort culinary team, presented a delicious six course dinner on the final night of the Sixth Annual Art, Wine & Food Festival, on Saturday night, at an elegant gala evening titled Capturing the Champagne Sparkle.
The gala menu was inspired by the chef’s Amazonian Cuisine Specialties and paired his exquisite dishes with Moët & Chandon and Dom Pérignon champagnes, provided by the Aruba Trading Company.
On the creative menu: Trio de Tierra, serving Foie Gras Tartelets topped with Mango Chutney, a shot of Crème de Apio and Bunuelo de Ucca, paired with Moët & Chandon Imperial. The second course titled Costa del Mar a la Huerta, followed with a Rissotto de Queso Amarillo, Mejilliones, and Escargots. The beautiful plate called Recuerdo Hulandes, reflected on the island’s Dutch roots with Herb Cured Salmon, Avocado Salsa, Guava Ginger Aiolui and Passion Fruit Vinaigrette, paired with Moët & Chandon Nectar Imperial. The fish dish, titled Del Caribe Al Exotico Amazonas served fresh local Grouper, Nicoise Olive Tapanade, Lychee Nuts over Mango Sauce, while the De Paso Por La Granja delivered an Entrecote of Angus Beef, with a Balsamic Cabernet Sauvignon and Red Fruit Reduction paired with Dom Pérignon.
The dessert platter, artfully decorated by Nora, featured Pasion Natura chased by Moët & Chandon Nectar Imperial Rose.
The evening was perfectly orchestrated by the Food & Beverage department and included a champagne reception to start, and a magical concert as the conclusion.
