Award winning chefs Erwin Husken & Jeroen Steentjes, the culinary team of Screaming Eagle Restaurant & Lounge presented a spectacular dinner experience as they paired their artistic and creative flair with the world’s most famous blend of French cognacs: Hennessy traditionally distilled since 1765.
The Aruba Trading Company and Screaming Eagle Restaurant & Lounge, teamed with Pascal Bony, Export & Brand Manager for LVMH, the luxury goods retailer Louis Vuitton, Moet & Hennessy, to host this memorable evening for the purpose of broadening the appeal of the cognac beyond its traditional base of older drinkers, and by introducing new signature cocktails and new products among them Hennessy Pure White.
Executive Chef Erwin Husken, declares Bony, is an artist in the true sense of the word, presenting a delicious and unforgettable menu flavored with Hennessy and infused with its distinct taste, also pairing dishes with world renowned Argentinean wines: Terrazas Torontes Reserva, Terrazas Chardonnay Reserva and Terrazas Malbec Reserva.
On the menu an amuse platter featuring creamy lobster bisque with a hint of Hennessy and lemongrass foam, tosti of shrimp with curry mayonnaise and a grilled scallop in shell on wakame salad with Thai caramel. The first appetizer delivered a combination of langoustines, tartar with Hennessy jelly and herb salad, carpaccio with creme of Dutch herring caviar, grilled with tomato bavarois, dotted by tarragon foam. The second appetizer surprised with grilled Dutch pike perch on a pillow of smoked eel with Hennessy dressing, flavored with pickled onion, olives and tomato, ceviche style. The melt-in-your-mouth main course presented grilled confit of sucade paired with Hennessy marinated duck liver and a Dutch meat croquette served over puree of green pea and red wine sauce.
For dessert, chef Husken entertained party-goers with a melting chocolate cake topped by Hennessy ice cream, chased by a tray of Boston cookies, coconut macrons, and Hennessy almond bonbons with coffee.
The evening turned patrons into Hennessy fans and connoisseurs. While some tried it for the first time, some reconnected with the prestigious brand via its famous signature cocktails, served on the terrace before dinner, with Sidecart and Hennessy Mojito among them.
